12 Farm Rich Jalapeño Peppers
2/3 cup all-purpose flour
1/3 cup cornmeal
3 TBSP granulated sugar
1 tsp baking powder
1/2 tsp salt
3 TBSP melted butter
1/2 cup milk, at room temperature
1 egg, at room temperature
- Cook Jalapeño Peppers according to package directions; halve peppers.
- Meanwhile, in large bowl, whisk together flour, cornmeal, sugar, baking powder and salt. In separate bowl, whisk together butter, milk and egg; stir into flour mixture until just combined.
- Preheat oven to 400°F. Spoon batter evenly into 24 greased mini muffin cups. Insert Jalapeño Pepper half into each muffin cup, pressing gently into batter. Bake for about 15 minutes or until set. Serve warm.
Tip: Fold some cooked and crumbled bacon or chopped fresh chives into batter if desired.
