Adjust Servings:
1 16-ounce package Farm Rich Pulled Pork in Honey Bourbon BBQ Sauce
1 loaf, cut into 4–5” pieces French bread
pickled carrots and radishes (see notes below)
English cucumber, thinly sliced
fresh cilantro
Optional toppings: jalapeño, mint, mayonnaise
For the pickled vegetables
1 cup water
1/4 cup rice vinegar
2 tbsp sugar
2 tsp salt

Easy BBQ Pork Banh Mi Sandwich

Banh mi might be one of the earliest examples of fusion food. It dates back to mid-19th century Vietnam when the country was still part of French Indochina. It blends French bread with Vietnamese staples, which is why it’s so versatile for sandwiches like this one.

This BBQ pork banh mi recipe uses barbecue pulled pork to create a delicious sandwich topped with pickled carrots and radishes, fresh jalapeños, cucumbers and cilantro. It’s a great twist on the traditional Vietnamese sandwich that is full of protein and flavor. Makes 6 banh mi sandwiches.

Pickle your vegetables.

Heat the ingredients for the brine in a saucepan until sugar and salt and melted, stirring occasionally. Remove from heat and let cool.

Place carrots and radishes in mason jars and pour cooled brine into the jar.

Heat pulled pork according to package directions.

Slice pieces of French bread lengthwise.
