Ingredients

  • 8 Farm Rich Mozzarella Sticks

    2 whole wheat pocket-style pita breads, warmed and halved

    1 1/2 cups diced cooked chicken

    1/2 apple, cored and diced

    1/4 cup light mayonnaise

    2 green onions, finely chopped

    2 TBSP dried cranberries

    1/2 tsp curry powder

    1 tsp Dijon mustard

    1/4 tsp each salt and pepper

Steps

  1. Cook Mozzarella Sticks according to package directions.
  2. Stir together chicken, apple, mayonnaise, green onions, cranberries, curry powder, Dijon mustard, salt and pepper.
  3. Divide chicken salad and Mozzarella Sticks among pita halves.
    Tips:
    • Add lettuce to sandwich if desired.
    • Substitute raisins or apricots for cranberries if desired.
