8 Farm Rich Mozzarella Sticks
2 whole wheat pocket-style pita breads, warmed and halved
1 1/2 cups diced cooked chicken
1/2 apple, cored and diced
1/4 cup light mayonnaise
2 green onions, finely chopped
2 TBSP dried cranberries
1/2 tsp curry powder
1 tsp Dijon mustard
1/4 tsp each salt and pepper
Steps
- Cook Mozzarella Sticks according to package directions.
- Stir together chicken, apple, mayonnaise, green onions, cranberries, curry powder, Dijon mustard, salt and pepper.
- Divide chicken salad and Mozzarella Sticks among pita halves.
Tips:
• Add lettuce to sandwich if desired.
• Substitute raisins or apricots for cranberries if desired.
