Spicy Sriracha Meatball and Sweet Potato Bites

Sweet potato cube stacked with a Farm Rich Meatball and tossed with Sriracha for a sweet and spicy bite.
16 Farm Rich Homestyle Meatballs
1 large sweet potato (about 1 lb)
2 TBSP Sriracha hot sauce
1 TBSP olive oil
1/4 tsp each salt and pepper
1/4 cup ketchup
- Cook Meatballs according to package directions.
- Meanwhile, peel sweet potato; cut into 16 cubes (about 3/4-inch cubes). Toss sweet potato with oil, salt and pepper. Place on baking sheet; bake in 350˚F oven for 25 to 30 minutes or until golden and tender.
- Mix together ketchup and sriracha; toss with Meatballs and sweet potato. Place 1 piece of sweet potato on serving platter; top with Meatball and skewer together with toothpick. Repeat with remaining Meatballs and sweet potato.
Tip: To make sweet potato cubes, slice off both ends of sweet potato. Place sweet potato lengthwise on cutting board and slice off 4 sides to create rectangular shape. Cut into 16 cubes.
