16 oz penne pasta
2 TBSP vegetable oil
2 vegetarian sausages, sliced
1 can (28 oz) diced tomatoes
1 tsp crushed red pepper flakes
3/4 cup heavy whipping cream
1/2 cup shredded mozzarella cheese
salt/pepper, to taste
Steps
- Cook Farm Rich Jalapeño Peppers according to package instructions.
- Bring a lightly salted pot of water to a boil. Cook pasta according to instructions for 8-10 minutes, until al dente. Drain and set aside.
- Meanwhile, heat up oil in a heavy pan and pan-fry sliced sausages for 2-3 minutes, until browned. Add tomatoes and red pepper flakes, then simmer over medium-low heat for 15 minutes, stirring occasionally. Add cream and simmer for an additional 1-2 minutes, then turn off heat. Stir in cheese. Add salt and pepper to taste.
- Stir in pasta, then transfer to a large serving plate. Top with jalapeno peppers and enjoy!
