  • Salsa:

    1 Tbsp olive oil

    1/2 red onion, minced

    1 16 oz can crushed tomatoes

    2 cloves garlic, minced

    6 oz diced green chilies

    2 tsp cumin

    1/2 tsp salt

    1/2 tsp pepper


    Huevos Rancheros:

    3-6 Farm Rich Jalapeño Peppers

    2 tsp olive oil

    2 corn tortillas

    1 tsp butter

    2 large eggs

    1 Avocado, sliced

    Fresh jalapeño, sliced

    Green onion, chopped


  1. Prepare Farm Rich Jalapeño Peppers according to package directions. Set aside.
  2. For the salsa: In a large skillet over medium-high heat, sauté onions in the olive oil until the onions become translucent, about 4-5 minutes.
  3. Add in crushed tomatoes, garlic, green chilies, cumin, salt, and pepper. Bring it to a simmer and reduce the heat to low.
  4. Simmer the salsa for about 10-15 minutes, stirring occasionally. Once the salsa is cooked, remove it from the heat and set aside.
  5. For the assembly: Prepare tortillas by heating 1 teaspoon of olive oil in a skillet over medium heat. Fry each tortilla for about 1-2 minutes per side. Remove from the skillet and place on a plate. Add salsa to the tortillas.
  6. Fry your eggs sunny-side up (in butter if preferred).
  7. Place eggs on top of salsa and tortillas. Top with more salsa, avocado, fresh jalapeño, green onion, and sliced Farm Rich Jalapeño Peppers.
